1 onion, diced 4 apples, peeled and diced 2 kg beetroot, grated ¾ cup brown sugar 300 ml white wine vinegar 4 cloves 5 star anise
In a saucepan over medium-low heat, cook the onion and apple together until soft. Add the beetroot and continue to cook for 5 minutes. Add the remaining ingredients and cook until soft.
