Confit garlic oil

Ingredients

8 cloves of garlic 500g vegetable oil 5 sprigs of thyme 2 bay leaves 1 sprig of rosemary

Method

1. Preheat oven to 180°C. 2. Peel the garlic cloves and combine all the ingredients in a medium baking dish. The garlic should be covered by the oil. 3. Bake for 45 minutes to 1 hour until the cloves are golden brown and tender. Remove the baking dish from the oven and let the cloves cool in the oil. 4. Store confit garlic oil in a sterilised jam jar in the fridge. It will last for up to 1 year.
