1L orange juice 300ml pink grapefruit juice 200ml lemon juice 150ml lime juice 150ml bergamot juice 500ml clementine juice 700g sugar 200g honey Dash of cider vinegar Sparkling water A wedge of fresh citrus
1. Combine all the ingredients in a pot and simmer until the mixture becomes a light syrup, reducing by about half. This may take anywhere from 30 minutes to 1 hour. 2. Store in a bottle or airtight container in the fridge until serving. 3. To serve, add ice cubes to a glass, and pour the syrup up to about a quarter of the glass. Add a dash of apple cider vinegar and fill the rest of the glass with sparkling water. 4. Add a wedge of fresh citrus fruit to the edge of the glass.
