For the salad ½ small and ripe cantaloupe or galia melon 1 cucumber ½ red onion 5 radishes 100g fresh feta For the dressing 80g olive oil 6g chilli flakes 10g honey 10g Chardonnay vinegar 12g soy sauce 9g Dijon mustard ½ lemon, juiced 15-20 mint leaves Garnish with Fresh basil and/or tagetes leaves, lemon zest, bee pollen
This salad has a perfect mix of sweet, spicy, and crunchy with just enough kick to shake you from the haze of summer heat when you can dream of nothing but ice cream, lemonade, and melon. One of our chefs, Silvana Astizia Manzi, came up with this particular combination, and it’s just so refreshing and delicious. For the salad 1. Cut the melon and partially peeled cucumber into chunks. Thinly slice your red onion. Slice the radish on a mandolin and refresh the pieces in ice water. For the dressing 2. Mix all the ingredients together and set them aside. 3. Mix the melon, cucumber, red onion, and radishes together in a bowl. Add about 75% of the dressing, and taste for seasoning. You might need a little extra lemon juice. 4. Serve the salad onto individual plates. Place a fat slab of feta on top of each serving, either whole or broken up. Pour over the remaining dressing. 5. Garnish with fresh leaves, lemon zest, and bee pollen.
