Watermelon and cucumber summer salad

Ingredients

For the salad ½ small and firm watermelon 1 cucumber 100g goat cheese 25ml milk (optional) For the dressing 1 bunch of chives, plus any herbs you might have 100ml apple cider vinegar 100ml olive oil Salt Garnish with Fresh basil and/or tagetes leaves Lemon zest Olive oil Black pepper

Method

1. Cut the watermelon and partially peeled cucumber into chunks. 2. Put chives, additional herbs, apple cider vinegar, olive oil, and two pinches of salt into a blender and mix until it’s smooth. To assemble 3. Put the fresh goat cheese on a plate (either on its own or mixed with milk to make it smoother and creamier). 4. Coat the cucumber in the dressing. Place the chunks of watermelon and dressed cucumber on top of the cheese. 5. Garnish with fresh basil or tagetes leaves. Finish with lemon zest, a dash of olive oil, and black pepper.
