1L fruit juice (eg. blue grapes) 600g sugar 1 bunch of red shiso leaves 50g apple cider vinegar Sparkling water
1 Strain the fruit juice through a fine mesh into a pot. Put the pot on the stove. 2 Add sugar and bring the mixture to a boil, reducing the liquid over medium heat by about half. Then, remove the pot from the heat. 3 Strain the syrup again through mesh. Add shiso leaves and vinegar and leave the syrup to infuse for a day or two in the fridge before using. 4 Remove the shiso leaves and put the syrup into a bottle. 5 To serve, fill one quarter of a glass with the syrup. Top with ice cubes and sparkling water. 6 Serve with a stirring spoon so the syrup and water can be mixed well.
