Honey and olive oil granola

Ingredients

150g hazelnuts 150g almonds 140g pumpkin seeds 140g sunflower seeds 140g sesame seeds 400g rough oats 9g fine salt 250g honey 125g olive oil 1 vanilla pod

Method

1. Combine all the dry ingredients in a large bowl. They should only fill half the bowl, so there is extra space for mixing. 2. Put the honey and olive oil into a large pot. Note: The mixture will expand by 2–3 times its size. 3. Scrape out the seeds from a vanilla pod and add them to your honey and oil mixture, along with the empty vanilla pod. 4. Bring the mixture to a heavy boil—it should bubble up and expand to 2–3 times its original volume. This is very important. 5. Pour the boiling mixture over the dry ingredients. 6. With a wooden spoon, mix everything together for a few minutes so the ingredients are well distributed. 7. Line a baking tray with baking paper and spread the granola out evenly in a flat layer. 8. Bake at 150–170°C, turning or stirring the mixture every 10 minutes to keep the granola from burning or cooking unevenly. 9. When the granola is golden all over, remove it from the oven. Cool and transfer your granola to an airtight container.
