250g butter, room temperature 50ml buttermilk 2.5g salt
1 Put the butter in a mixer with a blade or use a hand mixer. 2 Whisk until the butter is light and foamy, about 10 minutes. 3 Add buttermilk and salt and keep whisking. The texture should be like heavy whipped cream or lighter. It might take another 5 minutes. 4 Keep out of the fridge until serving.
